I’ve had a few requests for this recipe lately, so I thought I’d share it with you. Even though it has “snow” in the name, it’s a perfect, delicious, and refreshing dessert for a warm summer day.
Joel received this recipe from one of his co-workers a couple of years ago and it has quickly become one our family favorites!
Peaches in the Snow
CRUST:
1 envelope of graham crackers 1 cup sugar
1 stick margarine/butter
MIDDLE LAYER:
2 C. powdered sugar 2 (8 oz.) cream cheese
12 oz. cool whip
1 big can of peaches (29 oz.) drained and diced
GLAZE:
1 cup water 2 T. sugar
3 T. cornstarch 2 T. white corn syrup
¼ tsp. almond flavor (opt.) 3 T. peach Jell-o
Crush graham crackers. Mix graham cracker crumbs, sugar, and butter; press into 9x13 pan to make crust. Beat powdered sugar, cream cheese and cool whip and spread over crust. Dice peaches and place on filling. To make the glaze, heat the water, sugar, cornstarch, and corn syrup until boiling. Remove from heat and add almond flavor and Jell-o. When slightly cooled (do NOT cool the glaze in the fridge!) pour over the peach layer. Refrigerate for at least 4 hours before serving to give the glaze time to set.
* You can use other fruits and Jell-o flavors accordingly.
